3 cups shredded unsweetened coconut flakes I used finely shredded
1 cup coconut oil, melted
1/2 cup monk fruit sweetened maple syrup Can substitute for any liquid sweetener of choice- See notes *

Instructions:

Line a large plate or baking tray with parchment paper and set aside.

In a large mixing bowl, combine all your ingredients and mix very well. Lightly wet your hands then form small balls with the batter, placing them 1-2 inches apart on the lined baking tray.

Using a fork, press down onto each cookie. Refrigerate until firm.
